Week of October 20th

It has turned a bit chilly around here and I am sad to see the warm spell we had go and am reluctantly leaning into Fall. My house continues to have some busy evenings as the kids activities sometimes keep dinners from happening.

Monday- a rare night where I am the only one home for dinner, so cottage cheese buffalo dip for dinner(cottage cheese, buffalo sauce, and dry ranch seasoning).

Tuesday- Kimchi beef burritos, a crockpot classic in my house. Perfect for staggered dinners or when I am not around in the evening.

Wednesday- Curry broth noodles and dumplings. I messed these up a few weeks ago, so rainy day gave me the perfect chance to redeem. Love this dinner.

Thursday- Pasta and meatballs. So basic nothing fancy. I also made NYT french lentil salad as well.

Friday- Cava after a soccer game.

Saturday- We were all home so I went all out for dinner- Dom’s steak tips, grilled vegetables, and oven roasted potatoes.

Sunday- We all attended the US Woman’s national team game against Portugal, what a game! No real dinner- just hot chocolate and fries in the stadium and turkey sandwiches for the long drive to a from.
