Week of August 11th

Hello everyone what did you plan to eat this week and what did you eat? I am soaking up the last few weeks of summer especially now that both my kids are home. As we try to enjoy these last few weeks, this past week we were already in early dinners as my oldest runs off to train for soccer. I planned, or didn’t plan, for a fast dinner she could could eat in the 30 minutes she had once she got home from work and before she left.

I love this time of summer as I love local summer produce. It was a delicious week

Monday- My favorite quick easy dinner- salsa chicken, I made enough for 2 dinners and to freeze for the Fall. I added leftover corn and a can of black beans.

Tuesday - chicken nugget caesar salad for the kiddo. I also made Hetty McKinnon’s eggplant tahini udon.

Wednesday- I made an enchiladas sauce with CSA tomatillos. I added it to the leftover salsa chicken and made another round of quick tacos.

Thursday- I have a wonderful group of high school friends we get together almost monthly and celebrate birthdays, this month we met up at Posto in Somerville.

Friday- Grilled picante steak, that I had marinated and sous vide’ed for several hours , salad and sautéed brussels sprout tops and pea greens.

Saturday- Yay, camp pick up day! She had a blast and picked sushi for her dinner. We ordered take out from our go to sushi place- Sakura sushi, delivery was fast and it was all delicious.

Sunday- Using my favorite summer produce and cleaning out the fridge, we had sausage and peppers and onions, with sautéed corn and sun gold tomatoes and burrata. It was so delicious. I could not resist trying this recipe for rolls.
