Week of September 8th
Happy Monday readers and planners, what did you eat last week? We continue to work out our new seasonal schedule and are starting to settle in. My local farm co-op continues to offer just the best local produce and we are eating it up.
Monday- a divided dinner due to practices etc, so I made breaded chicken cutlet with salad on top.
Tuesday- one of my favorites in the rotation for fun quick dinner- bean tostasdos with corn and cabbage on top.
Wednesday- Greek Chicken pitas, air-fried marinated chicken thighs to feed the various dinner shifts.
Thursday- This recipe from Hetty McKinnon surprises me everytime. We had surplus tomatoes so I could not wait to make this and it so quick to make .

Friday- tik tok pasta with tomatoes and bousin cheese. A super easy way to clean our some produce.
Saturday- I think the kids were over my cooking and requested my husband makes burgers- which he is excellent at and what he made me the day we meet.
Sunday- We were going to be watching the Emmys so we made a snack dinner of garlic parm wings(for time trying this and they were a winner) and steamed broccoli with harbison cheese, which if you heat in the oven created a delicious fondue.
