Week of September 15th

This has been a picture perfect Fall in the northeast, just bluebird clear days and crispy mornings. Love all the activities and back to school nights. It does mean a few less dinners at home unfortunately, but I still try to plan out the few nights that I can. Did you eat anything yummy this week?

Monday- Salmon and/or shrimp rice bowls. Had 2 different seatings for dinner, so i cooked the rice in the insta pot and then air fried the salmon when they were ready to eat and had veg warmed in a pan.

Tuesday- Brothy beans inspired by the recipe in this book. I added pasta to ensure my kids will like it better.

Wednesday- To use all the farm co-op veg, I made Smitten Kitchen baked farro. First time making this recipe and is for sure a keeper- Everyone loved it!

Thursday- Back to school night so I could not make a proper dinner, I fed one kid leftovers and the oldest made her own dinner.

Friday- Another night of driving kids around. My husband and I ended up with a date night and went to Post. It was delicious, we will be back for sure.

Saturday- Late coming home for a far soccer game, so we ordered, no surprise, sushi from sakura .

Sunday- Grilled flank steak fajitas with sautéed peppers and onions and local corn, could be our last of the season.
